Directions:
1. Place the chocolate squares in a small bowl then microwave on high for 2 minutes. Stir with a small whip until smooth.
2. Measure the flour, baking soda, and salt into a mixing bowl and set aside.
3. In a large mixing bowl measure the sugar, add the butter and eggs, and beat with an electric mixer until creamy and fluffy.
4. Slowly mix in the water, vanilla, and melted chocolate until blended.
5. Pour in the dry ingredients and mix another minute scraping the sides of the bowl.
6. Fill each cupcake liner ½ full. Bake in a preheated 375 degree oven for 15-17 minutes. Top with chocolate frosting or light whipped cream. Yum!
*This recipe is a heavy, rich, chocolate cupcake, similar to a brownie. The tops come out flat after baking. They’re delicious.
Chocolate Butter-cream Frosting
1. Place the chocolate squares in a small bowl then microwave on high for 2 minutes. Stir with a small whip until smooth.
2. In a large mixing bowl measure the powdered sugar, add the butter, and milk.
3. Pour in the melted chocolate. Beat on high with an electric mixeruntil blended and fluffy.
4. Scoop frosting into a decorating bag, and pipe onto cupcakes.
5. Top with your favorite sprinkles. Yum!
