Hey Kids, Let's Cook Cookbook Recipes - Series 2

Peach Blueberry Fruit Topping

1 16 oz. can sliced peaches (packed in juice concentrate)

½ cup blueberries

2 Tablespoons cornstarch

½ teaspoon cinnamon

1 banana (optional)

1 lemon (optional)



 


Directions:

1. Separate the peaches from their juice by straining through a colander.

2. Pour the syrup and cornstarch into a medium sized saucepan.

3. Heat the mixture until it comes to a boil, continue stirring until it thickens.

4. Add the cinnamon and gently fold in the peach slices and blueberries.

5. Slice the banana into ¼ inch slices.

6. Juice the lemon and using a pastry brush, gently brush each side of the bananas with the lemon juice, (this keeps them from turning brown).

7. Fold the bananas into the fruit topping, and scoop onto the French toast. Yum!
