1 small flour tortillas
2 ounces mozzarella cheese
1 teaspoon of margarine
Assorted vegetables; bell pepper, carrots, zucchini
taco sauce or homemade salsa

Directions:
1. Dice the bell pepper into fine pieces.
2. Grate the cheese, carrots, and zucchini
3. Drop the margarine into a small frying pan and turn the heat to medium
high, add the tortilla.
4. On one half of the tortilla sprinkle the cheese, then the assorted vegetables.
5. Flip the other half of the tortilla over, and heat just a few more seconds.
Flip again, and heat a few more seconds., or until golden brown on both
sides.
6. Tilt the pan so the quesadilla slides onto a plate, cut into 3 pieces,
and dip into taco sauce or salsa. Yum!
