Homemade Tortillas

2 cups flour salt
2 teaspoons baking powder
2/3 cups warm water
3 tablespoons canola oil

Directions:

1. Add the dry ingredients to a medium sized mixing bowl.
2. Pour in the water and mix with a wooden spoon.
3. Gather the dough in your hands and transfer to a cutting board that has been sprinkled lightly with flour.
4. Using the palm of your hand knead the dough for 3-4 minutes.
5. Place the dough in a clean bowl and cover it with a clean dish towel.
6. Let the dough rest for about 30 minutes, (that will give the baking powder time to react with the water).
7. Divide the dough into 8 equal pieces.
8. Using a rolling pin, roll each tortilla to the size of a salad plate.
9. Turn a large fry pan or comal on to medium-high heat. Cook the tortilla until it is golden brown on both sides. Yum!
